High on the volcanic slopes of El Salvador’s Apaneca-Ilamatepec range, cool mountain breezes and intense sunlight weave together to create this extraordinary natural Pacamara. At Finca El Izotal (1,720m), deep red and burgundy cherries are selectively handpicked at peak sugar ripeness. These are laid out to dry entirely in their skins as a full natural, allowing the pulp and mucilage to slowly transfer their vibrant aromatics directly into the seed. The cherries are regularly throughout the drying phase, preventing over-fermentation, securing a meticulously clean and precise profile rather than a wild one. Following a dedicated resting and aging period in climate-controlled storage to harmonize the flavors, the result is an enchanting, syrupy cup. Every sip reveals a vibrant dance of warm cinnamon spice and dried berries, melting seamlessly into a rich, comforting finish of fruit cake and chocolate.
